The whole herring culture comes from a time when the people weren't so wealthy. The herring was a cheap way so that the commoners could eat a piece of protein when pork and beef were very expensive.
The Syrup waffle has a nice little piece of history. It was actually a 'by-product'. The cookie bakers had leftover dough, which they didn't want to trow away. So they combined the doughs, added typical "Dutch" spices (Indonesian) like cinnamon, cloves, pimento and vanilla. To make it even better they added the syrup in between. Al of a sudden, the syrup waffles became more popular than the other cookies… The region of Gouda (Guda cheese) has been very big with the syrup waffles because a lot of the cookie bakers were from that region.

A pity you only ate food that we Dutch advertise as real Dutch. A good haring is not slimey but firm and eaten without pickles and onions. Not sliced up so you can pick it up by the tale and tilt your head backwards and lower it in your mouth so you can bite off a piece. Onions and pickles were used ages ago to cover up bad haring.
You need to come back and eat real Dutch food.

When you go back go to Vlaams. It’s just a little window and they sell nothing but french fries and they’re very well known for them. They’re the best fries I’ve ever had (I’m American so I have pretty high standards). They have all kinds of different sauces to go with them that are delicious.
