i think if you ate them with chopsticks instead of the fork that could negate the softness problem a little
so what it sounds like you do is use the same amount of ginger that you did but let it sit in the fridge for only 15 minutes or so. that way it will come out just like yours! a happy accident 🙂

I have to infuse this with my bbq meatball recipe. I will add smoked paprika and unsweetened APPLESAUCE……probably will reduce brown sugar.
I was excited to try this recipe both because it's the first I'll use gochujang for and also the first I get to use my pestle and mortar for – the crackers which were reduced to fine crumbs very quickly and will be my go-to for cracker crushing in the future.

You have a similar enzyme in kiwis. So they are excellent choices for marinating tougher cuts of meat if you want them to be faster to cook/fry (like thin cuts of beef ribs Korean BBQ style).

I am trying to deplete my budget so I can't afford to drink… (a good method for trying to get sober)… I'm thinking tonight I'll order Chinese food. I'm also cooking for 3 this fortnight… Mum has just had surgery (a knee replacement), so I've got 4 roast dinners organised to help Mum out. Tomorrow is roast chicken… I can't wait, I usually only cook for one and it's so boring!

Hi Chef, I think the texture of the meatball is to do with the cracker crumbs not the enzyme from the ginger (the ginger enzyme is not strong enough to change the texture in such a short time). No disrespect, just share my thoughts here.

Good tip: to tenderize my meat, rub it down with fresh ginger and leave for an hour or two.
Would it be better to use Ginger powder ? dicing ginger is painful.

wait.. so if i marinade some 'poor cut' tough beef with ginger. will it tenerise it??
Whenever you get heavy stomach (like eating too much) or indigestion /acidity. Just chew like 5gm of raw ginger it works wonders because of that enzyme. It's taste spicy but good.
Also papaya is also very good for stomach as it has papain which is often used in digestive tablets.
Also raw papaya paste or pineapple are used as tenderizer for meats

@Chef John, Ritz crackers are my secret ingredient when I bread chicken or pork chops, the little savory/sweet really helps add something special.
