This is a experienced chef but seems a bit robotic . All the tricks , he tried some jokes but no one clapped or even laughed much . Videos going in the background, outside glare from the widows . The chef is average and the atmosphere could be better . C+ 😊

The biggest difference between Teppanyaki and Hibachi is that teppanyaki (teppan which means a flat iron plate. and Yaki means to cook or grill) is the method of what this Chef is doing, (cooking on a flat surface) as opposed to Hibachi cooking which the chef uses a round bowl (fire bowl) or stove with grates and has been done for hundreds of Years, whereas Teppanyaki has been around since 1946.
isn't that cross contamination with using the same serving device on raw chicken then getting raw steak on the same flipper thing ???

This is all a show to entertain customers. It is western style teppanyaki not the traditional Japanese way. Japanese way doesn't use butter nor fried rice. It is very basic. They don't usually serve a lot of guests in one setting in Japan. It is usually a small table.

Hibachi training takes approximately six months to complete. At first, you will probably be preparing food only for your coworkers. You'll need to spend hours practicing your tricks before you are ready to work in front of customers. Stay at the job for two years and you're considered a Chef of Hibachi.
Hibachi began in 1945 using open-flame grills and has always had 2 consistent elements… 1 it involved amusing tricks …2 it was performed for tourists. in fact many Japanese consider it insulting.
